Ingredients

21 soutzoukakia
  1. 1.1 lbsground beef (500 grams)
  2. 1egg
  3. 1onion
  4. 2garlic cloves
  5. 1 1/2 teaspoonscumin
  6. 1 tablespoonfresh mint
  7. 4.2 ozslices rye bread (120 grams)
  8. 3 1/2 tablespoonsolive oil (50 ml)
  9. 1level teaspoon salt
  10. 1/2 teaspoonblack pepper
  11. Tomato Sauce
  12. 1 can(14 oz/400 grams) crushed tomatoes
  13. 1 1/2 tablespoonstomato paste
  14. 2 tablespoonsolive oil
  15. 1 teaspoondried oregano
  16. 1chicken bouillon cube
  17. 3-5 dropssriracha sauce
  18. 1 1/4 cupswater (300 ml)
  19. Bulgur for serving
  20. 2 cupsbulgur wheat (350 grams)
  21. 1 3/4 cupsboiling water (450 ml)
  22. 2 tablespoonsolive oil
  23. 1 pinchsalt
  24. 1 pinchblack pepper

    Preheat the oven to 400°F (200°C) with convection.

    In a bowl, combine the ground beef, grated onion, pepper, salt, cumin, and egg.

    In a food processor, chop the rye bread slices, garlic, and mint.

    Add the mixture to the ground beef and knead by hand.

    Shape the soutzoukakia (meatballs) and place them on a baking sheet.

    Bake for 20 minutes.

    Meanwhile, make the tomato sauce. Place all the sauce ingredients in a food processor and blend.

    Add the water and mix. Pour the sauce over the soutzoukakia and bake for another 20 minutes.

    Meanwhile, prepare the bulgur. Place the bulgur in a bowl, pour over the boiling water, and cover with plastic wrap for 20 minutes.

    Stir the olive oil into the bulgur and season with salt and pepper. Mix well.

    Serve the bulgur topped with soutzoukakia and plenty of sauce. If you like, serve with feta cheese on the side.
