Boil milk, switch off flame then add lemon juice and keep stirring. Within few minutes Chena is formed and green water / Whey is visible. Keep rest for 10 minutes and then drain off excess water. Chena is ready.

Mash boiled raw banana + potato, then add Chena + salt + red chilli powder + garam masala + ginger paste and mix well.
Make medium size Vada and keep aside. - 3
Heat sufficiently and start dropping the prepared Koftas and fry till golden brown. Keep aside.

Make puree of chopped Tomato by adding chilli. Keep aside
Make a slurry of turmeric powder + Cumin powder + Coriander powder.
Chop boiled potato into cubes and keep aside. - 5
In pan add oil and allow to heat, add bay leaf + Cumin seeds and allow to crackle. Then add potato cubes and sauté for around 2 minutes. Then add tomato puree and sauté for around 2 minutes, then add the masala slurry and cook till oil is released.

Add water and cook for 3-4 minutes under higher flame. Then add the koftas and cook further for 2 minutes. Add sugar + garam masala and salt as required and cook further for 1-2 minutes.

Add Ghee and allow to simmer. Dish is done.
