Ingredients

40 minutes serve 2 people
For Litti
  1. 1big black colour brinjal
  2. 1chopped tomato
  3. 1 chopped onions
  4. 1chopped tomato
  5. 2 tbspchopped coriander
  6. 1 tablespoon chopped green chilli
  7. 1/2 tbspsalt
  8. 1/2 tbspred chilli powder
  9. 1 tablespoonoil
  10. 2 tbspdesiccated coconut
  11. For Chokha
  12. 2 cupall-purpose flour
  13. 1 tablespoonoil
  14. 1-2 tbsp carom seeds
  15. 1/4 tbspsalt
  16. For stuffing
  17. 1/2 cupsattu atta
  18. 1 tablespooncrushed green chillies
  19. 1/2 tbspginger garlic paste

Cooking Instructions

40 minutes serve 2 people

    “First, take a medium-sized bowl and add flour, carom seeds, and oil. Mix well and knead into a tight dough. Let it rest for 10 minutes.

    “Wash the brinjal and make a small slit in it. Insert a garlic clove into the slit, apply a little oil, and roast it over an open flame on a gas.

    “Add some water to a bowl and place the roasted brinjal in it. Once it cools, remove the skin and mash it with a fork. Add chopped onion, tomatoes, coriander, green chili, red chili powder, salt, and cumin powder. Mix everything well.

    “In a small bowl, add sattu flour, chopped green chili, ginger-garlic paste, salt, cumin powder, and desiccated coconut (I added it for a unique taste). Mix everything well.”

    Take the dough and divide in to equal portions shaping into a round ball,place some sattu’s mixture in the centre then seal and shape back into a ball gently press in to flatten slightly.Heat an appe (Paniyaram) pan add a little oil to each mold and placed the stuffed balls in.Cook on both sides until golden brown and crispy.

    “In a mixer jar, add coriander leaves, green chili, mint leaves, cumin seeds, salt, and lemon juice. Blend into a smooth chutney. Your litti chokha is ready—serve it hot with the green chutney. Enjoy Bihar special Litti Chokha.
