Ingredients

  • Marinade
  • 2 lbspork shoulder or pork butt (thinly sliced or cut into 1.5-inch chunks)
  • 1/2 cupbanana ketchup (or ketchup + 1 tbsp sugar)
  • 1/4 cupsoy sauce
  • 1/4 cupbrown sugar
  • 1/4 cuppineapple juice
  • 2 tbspcalamansi juice (or lemon/lime juice)
  • 4 clovesgarlic, minced
  • 1 tspground black pepper
  • 1 tsppaprika (optional, for color)
  • 1 tbspchili sauce or hot sauce (optional)
  • Basting
  • 1/4 cupbanana ketchup
  • 1 tbspsoy sauce
  • 1 tbspoil
  • 1 tspsugar (optional)
  • Other
  • Bamboo skewers (soaked in water for 30 mins and trimmed to fit air fryer)
  • Cooking spray or brush-on oil

Steps

    Slice pork into 1.5-inch chunks or thin slices (traditional style). In a bowl, combine all marinade ingredients. Add pork, mix well, and marinate for at least 6 hours, preferably overnight in the fridge. Thread 4–5 pieces of pork onto each skewer. Don't overcrowd. Let excess marinade drip off slightly before air frying.

    Preheat air fryer to 375°F (190°C) for 3–5 minutes. Spray or lightly brush the air fryer basket with oil. Place skewers in the basket in a single layer. Air fry at 375°F (190°C) for 12–15 minutes, flipping halfway through.

    During the last 3–5 minutes of cooking, brush with basting sauce on both sides. Continue cooking until nicely glazed and charred. Check for doneness (internal temp at least 145°F for pork, ideally 160°F for safety). Let rest 2 minutes, then serve with garlic rice, vinegar dipping sauce, or pickled papaya (atchara).

    ✅ Tips: Thinly sliced pork gets that classic Filipino street BBQ texture. Add a drop of liquid smoke to the marinade for a grilled taste. You can air fry without skewers too — just turn halfway through.
