Fir Dosa Batter: Soak dals and methi. Also soak rice separately for 6 hours. Drain them in a strainer.

Crush dals and methi seeds to a smooth paste, using water as needed.Transfer to a big vessel.

Crush the rice slightly coarsely, using water as needed. Transfer to the vessel.

Mix both well and ferment for 7-8 hours.

For Vegetable. Curry Topping: First boil 2 litres of water. Add in salt. Add in soya chunks and boil them for 8 minutes. Strain the boiled soya chunks and refresh with cold water. Cool and squeeze out the extra water.

Take in a mixer and crush the cooked soya chunks coarsely.

For Tempering the Topping: In a pan take oil/ghee add in rai, chanadal and hing. Add in curry leaves and onions chopped. Cook until pink.

Add garlic chutney and mix for 1 minute.Add in tomatoes and salt. Cook until tomatoes are almost done. Meanwhile, ready the dry masalas.

Mix well. Add in 2-3 tbsp water and cook the masalas well. Now add in the crushed soya chunks.

Mix and add some water if needed. Cook for 3-4 minutes. Lastly, mix in finely chopped green chillies. High protein Vegetable. Curry Topping is ready.

Now spread a thick dosa. Keep gas flame medium.After 30 seconds, spread the Vegetable. Curry Topping. Press a bit to stick well. Spread ghee around the dosa and on the topping.

When crispy, turn and cook the topping side also. Turn again. Healthy protein-rich Vegetable. Madurai Curry Dosa is ready. Serve with coconut and garlic chutneys.
