For Doodhpaak: Bring 2 litres of milk to a boil. Meanwhile, mix little ghee in washed basmati rice. Also soak saffron and cut badam-pista into slivers. When the milk boils add in ghee-coated rice and cook, by stirring occasionally.

When the rice gets cooked, add in sugar and boil for 5-7 more minutes. The Doodhpaak will thicken a bit. Add in saffron,elaichi-jaiphal powder and badam-pista slivers.

For Parval Sambhariya: Wash, scrape skin and deseed the parval. Peel the potatoes. Prepare the stuffing masala. Stuff into parval and potatoes. Steam boil the stuffed parval and potatoes for 7-8 minutes.

Now do tempering of the Sambhariya with oil, rai and hing. Place the steamed stuffed vegetables. Mix the tempering all over. Place the leftover stuffing masala on top, cover and cook for 3-4 minutes.

Tasty Parval Sambhariya is ready. This stuffing can be used to prepare any other bharelu shaak.

For Kadhi: Mix besan and ginger-chilli paste in sour curds. Mix in water and set the kadhi consistency. Do the tempering with ghee, rai, cinnamon, cloves, jira, methi seeds, hing and curry leaves. Add in the kadhi mixture. Boil the kadhi for 12-15 minutes on medium gas. Add in jaggery and salt.

For Bataka Vada: Prepare the batter using besan, rice flour, masalas, salt, soda and hot oil. Prepare the vada mixture with boiled potatoes, ginger-chilli paste, salt, coriander and tempering.

Mashed potatoes and mix in tempering.(Tip: If the mixture is soggy,add in poha powder 1-2 tsp as needed.)

Dip vada balls into batter and deep fry in medium hot oil. For Lachko Moong: Boil the soaked moong to 3-4 whistles in a cooker. Do the tempering with oil, rai and hing. Add in boiled and slightly mashed moong. Mix in salt and 3 dry masalas and mix and cook for 2-3 minutes.

Make green chutney as usual with coriander,chillies,salt,lemon,gingerMake the rice. Also make the Puris. Now with all the components of the Gujarati Thali ready, serve with love to you dear and near ones. Happy Cooking😊!!
