First, ready all the ingredients. Wash ragi 4-5 times well and soak for 10 hours.

For Ragi Milk: Wash soaked ragi again, drain and crush it with 1/2 cup of fresh water in mixie.

Using a clean cotton cloth strain out the ragi milk by squeezing. Take the squeezed ragi filtrate remains again into the mixi, add 1/2 cup water and churn out 2nd ragi milk. Strain using the cloth. Do this 3rd time also.

This way we will get 1 1/2 cups ragi milk. (If desired 2tsp milk powder can be added for additional flavour, but I did not add). Stirring continuously, cook the ragi milk for 4-5 minutes.

The ragi milk will thicken as it gets cooked. Add in saffron and mix. Now add in the chopped dates and cook for 3 more minutes. Don't forget to stir continuously. Switch off gas and coolnthe ragi milk- dates mixture completely.

Meanwhile, ready the other ingredients. Grate the coconut🥥, chop the and badam-pista

Now take the cooled ragi-dates mixture in mixie. Add in all mango pieces and half the quantity of grated coconut.

Now churn and form a tasty MILLET ICE CREAM MIXTURE. Pour the mixture into an airtight container.

I have kept it a bit chunky. Mix in some grated coconut and chopped badam-pista. Mix. Now top again with coconut and chopped badam-pista.

Note to use an airtight container. Set the HEALTHY MILLET ICE CREAM in freezer for 8-10 hours
