Whisk the yogurt and set aside.

Grind coconut with water to a smooth paste.

In a pan, add pineapple, green chilies, ginger, curry leaves, turmeric, salt and water. Cook on high till it comes to a boil. Cook covered on medium flame for 6–7 minutes, until pineapple softens. Let excess water reduce slightly.

Add the coconut paste, cook until just boiling, then turn off the flame.

After a minute, stir in whisked curd. Mix well. Adjust salt/sugar if needed.

For tempering: Heat coconut oil, splutter mustard seeds, toss dried red chilies (remove and keep aside), then fry shallots and curry leaves until golden. Switch off, let cool a minute, then pour over pachadi. Cover for 8–10 minutes.
