My heater broke so I definitely needed something to warm me from the inside! Just missing a monkey cap to survive this Colorado winter now 😂

Wash and soak rice for 20 minutes, then cook and set aside.

Heat mustard oil in a pressure cooker, add bay leaf and whole garam masala.

Add sliced onions and sauté until golden brown.

Add ginger-garlic paste, cook until raw smell disappears.

Add chopped tomatoes, cook until soft.

Add turmeric, chili, cumin, coriander powder, and salt. Mix well.

Add mutton pieces, sear on high heat for 5 minutes.

Add water, close the lid, and pressure cook for 5-6 whistles.

Let the pressure release naturally, open and simmer if needed for desired consistency.

Serve hot with cooked basmati rice.
Tips
For extra flavor, marinate the mutton with spices for a few hours before cooking.
