Ingredients

40-ish minutes
8 people
  • 15 ozblack-eyed peas (can be frozen, canned, etc.)
  • 1red pepper, diced
  • 1/4 cupbanana peppers
  • 1/2red onion, diced
  • 2cucumbers, smashed and chopped
  • 1 tbspOlive oil to massage collards
  • 1sweet taters, small cubed
  • 1 bunchcollard greens, cleaned /destemmed, and thinly sliced
  • 1jalapeño, deseeded and diced
  • 1/4 cWalkers jerk marinade
  • 1/2lemon, juice
  • 1/2 tbspminced garlic
  • A fewdrizzles of honey, to cut the heat
  • 1 tbspolive oil
  • 2-3 tbspwater

Steps

40-ish minutes
  1. 1

    Preheat the air fryer to 400 degrees and "fry" the taters. I drizzle with a little oil and sprinkle with cinnamon, paprika, and a little nutmeg.

    Prepare your mise-en-place. Chop, clean, and dice everything up!

    With a 1 tbsp of olive oil, massage the collards

    Mix up your dressing! Jerk marinade, lemon, honey, garlic, olive oil, & water. In a small bowl whisk together

    Marry your ingredients together in the bowl with the greens.

    Slow pour "dressing" onto salad until desired..saturation.

    Let it sit in the fridge until ready to serve or prep for the week and let it sit overnight!
