Make garlic paste:
Using a mortar and pestle, grind garlic, black pepper, turmeric, and salt into a smooth fragrant paste. Divide into two portions one for the kofta and one for cooking the sauce./Buat pasta bawang putih:
Menggunakan cobek dan ulekan, haluskan bawang putih, lada hitam, kunyit, dan garam hingga menjadi pasta yang halus dan harum. Bagi menjadi dua bagian satu untuk kofta dan satu lagi untuk memasak sausnya. - 2
Prepare kofta mixture:
In a bowl, combine minced beef, egg, flour, salt, and half of the garlic paste. Mix well until the texture is firm enough to shape./ Siapkan adonan kofta:
Dalam sebuah mangkuk, campurkan daging sapi cincang, telur, tepung terigu, garam, dan separuh dari pasta bawang putih. Aduk rata hingga teksturnya cukup padat untuk dibentuk. - 3
Shape & cook kofta:
Form small meatballs and pan-fry in a lightly greased nonstick pan until browned and cooked through. Set aside./ Bentuk & masak kofta:
Bentuk menjadi bola-bola daging kecil, lalu goreng di atas wajan antilengket yang diberi sedikit minyak hingga berwarna kecokelatan dan matang sempurna. Sisihkan. - 4
Fry tofu:
Lightly deep-fry tofu until golden and slightly crisp. Set aside./ Menggoreng tahu:
Goreng tahu dengan minyak banyak hingga berwarna keemasan dan sedikit renyah. Sisihkan. - 5
Build the base:
Heat oil in a pan. Sauté remaining garlic paste with ginger, bay leaves, lemongrass, and turmeric until fragrant./ Buat dasar bumbu:
Panaskan minyak dalam wajan. Tumis sisa pasta bawang putih bersama jahe, daun salam, serai, dan kunyit hingga harum. - 6
Cook vegetables:
Add onion and cook until soft. Add green beans, carrots, jalapeño, and chili. Stir and cook for 3–4 minutes./ Masak sayuran:
Tambahkan bawang bombai dan masak hingga lunak. Tambahkan buncis, wortel, jalapeño, dan cabai. Aduk dan masak selama 3–4 menit. - 7
Combine:
Add fried tofu and kofta. Pour in a little water and let everything simmer together./ Campurkan:
Tambahkan tahu goreng dan kofta. Tuangkan sedikit air, lalu biarkan semuanya mendidih perlahan bersama-sama. - 8
Final simmer:
Cook until the vegetables are tender but still slightly crunchy, and all flavors are well combined (about 7–10 minutes)./ Pemasakan akhir:
Masak hingga sayuran menjadi empuk namun masih sedikit renyah, dan semua cita rasa telah menyatu dengan baik (sekitar 7–10 menit). - 9
Serving suggestion
