Extract the juice from the soaked tamarind. (You will get about 3/4 cup of tamarind water since you soaked them in 1 cup water)

In a pan add oil, coriander seeds, toor dal, red chillies, rice, fenugreek seeds, saute 2 to 3 minutes... Then add coconut, once the coconut turns slight golden brown color, turn off the flame. Let it cool for 5 minutes and then grind them to a smooth paste

Wash and soak millet and toor dal for 1-2 hours.Pressure cook millets and toor dal together.Cooking them together saves time.. You will need approximately 6 cups of water to cook millets+dal combined together. Adjust measurements accordingly.

Take a wide bottomed pan and heat a tsp of oil... Add the chopped veggies one by one and keep sauteing... After 2-3 minutes add 2 cup of plain water... Let the veggies get cooked in plain water for approximately 5 minutes...

Now is the time to mix thick tamarind extract to the pan.. Cook 5 minutes...

Add salt,sambar masala turn the flame low...

The consistency of sambar will be a bit thick.You will get a fine aroma of coriander seeds and sambar will start to thicken further...

This is the time to add sambar to the pressure cooked millets+dal mixture
Keep on stirring and within 10 minutes you will get the perfect consistency of sambar rice. Adjust salt... It has to be slightly runny... - 12
Heat oil in a pan, add mustard seeds, red chillies, cashews, asafoetida and curry leaves. Let them splutter.Add this on sambar sadham... Garnish with coriander leaves before serving...

Appalam,Vadaam or potato fry is the ideal combination of sambar sadham.
