Chuttaracha Chammanthi city style (coconut chutney with a swag) -non authentic twisted easy version

All malayalis (who were born and brought up in kerala) would have at least once had the luxury of treating their taste buds with the yummy chuttaracha chammanthi. You can't beat it, but here's my twisted take on that one- super quick and easy. It may not be as good as the authentic version, but it will surely give you a good flavor of the nostalgia.

To start with, the prep time is mainly for the hero ingredient, our very own coconut. Just get them grated, I'm not gonna tell you how.

Heat the coconut oil in a pan. Add the dried red chillies and shallots and fry them.

Add grated coconut along with salt, chilli and turmeric powder and fry them until brown (do not get carried away by golden brown, saute it till it gets brown)

Put off the flame, allow the mixture to cool and grind it in a mixer grinder with little water. The consistency should be such that you can make a soft ball out of it. Add additional salt if required.

Garnish to your creativity and relish. Tastes perfect with boiled rice. Goes with idli and dosa too. Try for yourself and see how close you can get this to the authentic version. But yeah, I can guarantee this will get you a flavor of that nostalgic mouth watering chammanthi all malayalees crave for and you will end up eating more rice than you intended to -LOL.
