Ingredients

  1. 1 packageVietnamese rice paper wrappers (available at Asian grocery stores)
  2. 2.2 lbsChinese chives (about 1 kg)
  3. 2 teaspoonssalt
  4. Pork lard with crispy bits, as needed (or use vegetable oil)
  5. Water, as needed, for soaking the rice paper wrappers

Steps

  1. 1

    Wash the Chinese chives, pat dry, and cut into 1/2-inch pieces. Set aside.

  2. 2

    Stir-fry the chives in pork lard with crispy bits (or vegetable oil). Add salt (add more if you prefer it saltier). Cook until just wilted, then let cool.

  3. 3

    Soak each rice paper wrapper in water until soft. Place the filling on the wrapper, roll it up, and serve with sweet soy dipping sauce and pickled chilies.
