Ingredients

120 minutes
8 servings
  • 1 1/3 lbspork shoulder (the best cut)
  • 10 1/2 ozliver, about 6k-7kl is enough
  • 3/4 cupunsweetened milk (200 ml)
  • 7 ozpork skin
  • 8 3/4 ozpork fat
  • 1 tablespoonwhite wine (I use sake)
  • 10shallots
  • 1/2small onion
  • 1 clovegarlic
  • Whole black pepper to taste
  • 1 tablespoonoyster sauce
  • 1 tablespoonfish sauce
  • Cooking oil, seasoning powder to taste
  • 2 piecesLaughing Cow cheese
  • 1baguette, use the inside only

    Clean the liver, slice it, and soak in 1/2 cup (100 ml) of milk for 15 minutes to remove odor and toxins.

    When selecting liver, pay attention to a few points. Healthy animal liver is dark red or light purple. It should feel soft and smooth to the touch. Press your index finger into the liver; it should leave an indentation that remains when you remove your finger. In contrast, diseased animal liver often turns brick red, yellow, or silvery white. Diseased liver is mushy like mud and should never be used; it must be discarded.

    Tear the inside of the baguette into small pieces and soak with 1/2 cup (100 ml) of milk to soften.

    Clean the pork skin and boil until tender. Rinse the liver again. After boiling, rinse the pork skin as well.

    Take 1 3/4 oz (50 g) of pork fat, dice it, and briefly boil. Use the remaining 7 oz (200 g) to line the bottom of a bowl for steaming.

    Chop the pork skin finely and blend it with the liver, cheese, and soaked bread until smooth. Add the pork and blend until fine. At this point, the pork skin may still be a bit chunky. (Blending again after sautéing the ingredients will make it smoother).

    Heat a pan on the stove. Add cooking oil and sauté the chopped shallots, garlic, and onion until fragrant.

    Add the meat and liver mixture to the pan and cook until done. Season to taste. Remove from heat. Sprinkle with black pepper. Add wine for aroma and to remove the liver's odor. (You can taste the pâté now! Adjust the seasoning if needed).

    Blend the entire mixture again until completely smooth.

    Mix in the pork fat. Then pour into a large bowl, lining the bottom with pork fat for a nice shape and a rich taste! 😊

    Pour water into a steamer and steam for 3-5 hours if using a regular steamer. (Depending on the amount of pâté and your preference, steam until tender or just right!) Cover with foil and a lid to prevent water from dripping onto the pâté while steaming. You can use a pressure cooker to steam for 2 hours. Pour water below and place the bowl on top.

    Note: Many people wonder why the pâté color isn't pretty. Here's the explanation! Hải Phòng pâté comes in two colors: light brown and red. The brown color is due to more meat and less liver, while the red color is due to more liver! Liver is cheap but not very healthy as it is the body's detox organ and high in cholesterol. Therefore, I use less liver for a tasty yet safe pâté!

    You can use a thermal cooker to make pâté! Steam normally for 30 minutes to keep the pâté warm for a long time! Then keep it in the thermal cooker for 9 hours! The resulting pâté is very delicious! In the picture, I used a thermal cooker! I didn't add a layer of fat on top because I was worried about the richness! I used very little liver, so the pâté color is a bit light!

Mình may mắn sinh ra ở Hải Phòng - nơi có nhiều món ăn rất ngon như bánh đa cua, bánh giò, bánh mỳ Patê, chè bệt, bánh bèo, bánh gối, sủi dìn, nem cua bể...Nấu ăn vốn ko phải sở trường của mình! Từ khi chuyển vào Nam- ko có những món ăn của Hải Phòng nên mình phải tự mày mò, học hỏi. Nấu nhiều thành quen, đâm ra yêu thích nấu ăn từ đây! Sở thích từ xưa của mình là thích bánh ngọt Pháp nhất là ăn ở hiệu bánh Môka - Ngày xưa ở Hoàng Văn Thụ giờ chuyển về Cát Dài! Mình thích mùi thơm của bánh toả ra khắp nhà thật thơm và ấm cúng! Thích cùng con trai nặn bánh, rán nem! Những khoảnh khắc đó sẽ lưu giữ lại trong ký ức của chúng về bếp ăn gia đình- thật thân thương. Lớn lên hơn nữa, khi xa nhà chúng sẽ nhớ mùi thơm của bơ, vani... Ngày mỗi ngày sẽ có những món mới ra đời giống như cuộc sống có nhiều màu sắc!
