Ingredients

  1. 1FOR CHICKEN
  2. 1 1/2 lbboneless skinless chicken breasts cut into 1/4 inche slices
  3. 1/2 cupsour cream combined with 1teaspoon lemon juice
  4. 1/2 cupflour
  5. 1/2 cupgrated parmesan cheese
  6. 1 tspcajun seasoning
  7. 1 tspblack pepper and salt to taste
  8. 1 tbspolive oil
  9. 1 tbspbutter
  10. 1 lbfresh broccoli cooked in boiling salted water until crisp tender
  11. 1FOR SAUCE
  12. 1 smallonion, chopped
  13. 2minced garlic cloves
  14. 3 tbspflour
  15. 3 tbspbutter
  16. 1 cupchicken broth
  17. 1 cupheavy cream
  18. 1/4 cupgrated parmesan cheese
  19. 1/2 tspcajun seasoning
  20. 1/2 tspblack pepper and salt only if needed
  21. 1 tsphot sauce such as franks brand
  22. 1 tspfresh lemon juice
  23. 1FOR TOPPING
  24. 1 1/2 cupshredded cheese, I used a blend of pepper jack and sharp cheddar

  1. 1

    Line a heatproof platter with cooked broccoli.

  2. 2

    Combine flour,parmesan cheese, cajun seasoning, pepper and salt. Brush chicken lightly with sour cream, add to flour/ cheese mixture shaking off excess. Heat the olive oil and butter in a large skillet and sear chicken, turning once until golden and cooked through Remove chicken as done to top broccoli on platter..

    Preheat oven broiler to high, have your rack about 3 inches from broiler.

    Into skillet where chicken was cooked make sauce. melt butter, add onion and garlic and soften, add flour and whisk 2 minutes, it will be thick, add all sauce ingredients and whisk until smooth, bring to a boil and cook until thickened to a sauce consistancy.

    Top chicken with sauce, evenly top with shredded cheese.

  6. 6

    Place under broiler and heat until cheese melts and all is hot.

  7. 7

    Serve with crusty bread or rolls.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
