Ingredients

  1. CUPCAKES
  2. 1 3/4 cupplus 2 Tablespoons all purpose flour
  3. 3/4 tspbaking powder
  4. 1/4 tspsalt
  5. 3/4 cupunsalted butter, at room temperature
  6. 1 1/2 cupgranulated sugar
  7. 3large eggs
  8. 3/4 cupwhole milk
  9. 1 tspvanilla extract
  10. 1 cupmini semi sweet chocolate chips
  11. CHOCOLATE GANACHE FROSTING
  12. 1recipe of the Chocolate Ganache Frosting, recipe is attached in direction step #8
  13. GARNISH
  14. 1/2 cupwhite sprinkles

Cooking Instructions

    Preheat oven to 350. Line 14 cupcake tins with paper liners

  2. 2

    In a bowl whisk flour, baking powder and salt, set aside

  3. 3

    In a large bowl beat butter and sugar until light and fluffy

  4. 4

    Add eggs, one at a time, beating in after each egg. Combine vanilla with milk and alternate milk with flour mixture, stirring inust until combined

  5. 5

    Fold in chocolate mini chips

  6. 6

    Fill prepared cupcake tins evenly with batter

  7. 7

    Bake for about 13 to 15 minutes until a toothpick comes out just clean. Cool 10 minutes on rack in pans then remove and cool completely before frosting

    Frost cupcakes with Chocolate Ganache Frosting, recipe attached below and garnish with white sprinkles

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
