Ingredients

  1. 1 tbspbutter
  2. 1onion, finely diced
  3. 3garlic cloves
  4. 500 mlchicken broth
  5. 900 gramsCauliflower florets
  6. 400 mlHalf-and-Half
  7. 1/2 tspmustard
  8. 150 gramsPepper Jack Cheese
  9. Garnish
  10. 1parmesan cheese

Cooking Instructions

    In a large skillet, melt butter over medium heat.

    Add onion, and cook until soft, about 3-5 minutes.

    Add garlic, and cook, stirring frequently for about 30 seconds

  4. 4

    Pour in chicken broth

  5. 5

    Add cauliflower and cover skillet

  6. 6

    Let the cauliflower stem until fork-tender for about 20 minutes.

  7. 7

    Carefully and cauliflower and broth mixture to a blender

  8. 8

    Blanc until smooth

  9. 9

    Season with salt and pepper

  10. 10

    Stir in shredded cheeses until it melts

  11. 11

    Garnish with a pinch of shredded Parmesan cheeses, if desired
