Ingredients

6 servings
  1. 2 1/4 cupchicken broth or water
  2. 1 cuplarge couscous
  3. 1/2 tspolive oil
  4. 1/2 tspsalt
  5. 1 canchick peas (drained)
  6. 3/4 cupdiced green bell pepper
  7. 3/4 cupdiced red bell pepper
  8. 1/4 cupred onion chopped
  9. 3green onions chopped
  10. 1/2 cupcilantro chopped
  11. 1/2 tsphot pepper flakes
  12. 1Dressing
  13. 1 tsphoney
  14. 3 tspolive oil
  15. 1Juice of one large lemon
  16. 1salt and pepper to taste

Cooking Instructions

  1. 1

    Bring broth or water to a boil. Add couscous, olive oil and a dash of salt. Simmer 10-12 minutes. Turn off the heat when almost all the broth is gone. Cover with lid. Couscous will absorb all broth.

    Combine cooked couscous, chick peas, peppers, onion, green onions, cilantro and hot pepper flakes.

    Whisk together honey, olive oil, lemon and salt and pepper to taste combine with couscous mixture. Enjoy!
