Bill Conlon's Steak-Eggs Bill Conlon's Steak-Eggs
My dad was a big-time foodie and excellent cook. He invented this easy recipe back in the 1950s, and it's been a family favorite ever since. A great way to repurpose leftover steak, but I've also been known to cook a steak just to make into steak-eggs.Measurements aren't really important here; you really go by looks and consistency of the batter, which depends on how much leftover steak you're using. It should be just a little bit looser than cake batter. It's also delicious to add leftover sauteed mushrooms and/or caramelized onions to the batter, if you have them on hand. Or top the cooked steak-eggs with sauteed mushrooms or homemade mushroom gravy. Maggie Conlon
