Ingredients

  1. 5 lbsYukon gold, baby red or russet potatoes
  2. 1 cupChicken stock
  3. 3 clovesgarlic minced
  4. 1 cuphalf and half
  5. 1 stickgood quality butter sliced
  6. 1/4 cupolive oil
  7. 2 teaspoonssalt
  8. 1 teaspoonpepper
  9. 1/2 cupsour cream
  10. 1 cupor more Shredded white cheddar cheese (optional)
  11. 1 Tablespoonor more Parsley (optional)

Steps

  1. 1

    Clean and peel potatos if desired. I leave it on and dice. Soak diced potatos in lightly salted water for at least 30 minutes. This is a optional step but preferred.

    Rinse and drain potatoes. Spray non stick cooking oil in slow cooker and place potatoes in cooker along with garlic, butter, olive oil and broth.

  3. 3

    Cook on high for 3 to 4 hours or till you can easily pierce with a fork. Make sure to stir once or twice while cooking. Then add in rest of ingredients and mash or use a hand mixer and blend till smooth and creamy.

  4. 4

    Keep on warm till ready to serve and mix in a little extra butter, half and half or broth as needed for desired texture add salt and pepper to taste. Enjoy !
