Ingredients

  • 2 cupskidney beans
  • 2&1/2 cups of tomato paste or chopped tomatoes
  • 200 gmince meat
  • 3 cupsbeef stock or stock cubes
  • 2bell peppers (diced)
  • 1/2a large red onion (diced)
  • 4Chilli peppers (diced)
  • 1scotch bonnet (if you want extra spice)
  • Ground cumin
  • clovesGround
  • Salt
  • 3 tablespoonsoil
  • Ginger
  • Garlic

    In a soup pot, heat about a tablespoon of oil. Add your mince meat, garlic, ginger, salt and ground cloves, and stir until brown. 

  2. 2

    Add your bell peppers, chopped onion, and chilli peppers. Stir until the onions are translucent. 

  3. 3

    Add your tomato paste, and kidney beans, as well as your stock. If you don't have any stock, simply add 3 cups of water, and two stock cubes. 

  4. 4

    Add ground cumin, chill powder and scotch bonnet. 

  5. 5

    Leave to simmer uncovered and on low heat for about 45 minutes - 1 hour (or more). Until the beans are well cooked
