Ingredients

  1. 12 lbturkey
  2. 3onion
  3. 1 1/2 cupscallions
  4. 3jalapenos
  5. 6 tspfresh thyme
  6. 3 tspsalt
  7. 6 tspsugar
  8. 3 tspallspice
  9. 1 1/2 tspnutmeg
  10. 1 1/2 tspcinnamon
  11. 9 tbspsoy sauce
  12. 3 tbspcider vinegar
  13. 3 tbspextra virgin olive oil
  14. 1lime
  15. 1orange
  16. 3 tspblack pepper

Cooking Instructions

    Finely dice onion, scallions, and jalapenos

    Juice lime and orange

  3. 3

    Mix in large bowl onions, scallions, jalapeno, thyme, pepper, nutmeg, cinnamon, salt, sugar, allspice, extra virgin olive oil, soy sauce, orange juice, lime juice and cider vinegar

    Optional: put in blender and blend together

  5. 5

    Put Turkey in large bag and rub marinade all over it, dump any extra into the bag

    Push all the air out of the bag and tie tightly around the turkey let sit overnight in refrigerator

  7. 7

    Remove from bag place in oven at 325 tell internal temp is 165 usually about 3 and a half to 4 hours unstuffed.

    Base every 15 minutes to half an hour

    Optional: keep some of the marinade in a bowl to occasionally brush on the turkey as it cook's
