Ingredients

  1. 3 cupBulgar wheat
  2. 1 mediumLemon
  3. 2 largeRed peppers
  4. 4 cupVegetable or chicken stock.

Cooking Instructions

    Add 2 cups of stock to the bulgar wheat. Cover and refrigerate for 2 hours.

    Add remaining stock and bulgar wheat to a saucepan. Bring to boil and simmer until soft. Top up with boiling water if required.

    Grill red peppers until the skin is black.

  4. 4

    Peel off black skin and chop into cubes.

  5. 5

    Add to bulgar wheat

  6. 6

    Serves with healthy squeeze of lemon juice.

  7. 7

    N.b you can add anything to this recipe. If you want it purely vegetarian friendly roast more veggies and add. If you need some meat try grilled chicken.
