Ingredients

  • 1 tbspOil (I use coconut but any works)
  • 1/2onion, chopped
  • 1 tbspTaco Seasoning
  • 1 1/2 lbBoneless, Skinless Chicken Breast, cubed
  • 4 canCannellini/White Kidney Beans (rinsed & drained)
  • 1 cupchicken broth
  • 1 1/2 cupsour cream
  • 1/2 cupMilk or Cream

Steps

  1. 1

    Saute onions in oil over medium heat until soft (be sure to use a pot that has a lid).

  2. 2

    Add chicken and taco seasoning, stirring occassionally until just cooked through.

  3. 3

    Add chicken broth and Cannelini Beans. Stir to combine.

  4. 4

    Reduce heat to low. Add Sour Cream and milk

  5. 5

    Serve when heated through. To stretch this recipe it can be served in bowls over rice.
