preheat oven to 350°F

combine all ingredients from the meat section.

form into small patties (about 4in across, 1/2in thick) and cook in a medium high pan for 5 min.

finish cooking the patties in the oven, about another 15-20 minutes

using the same saute pan, cook the veggie sides. start by letting the butter come up to medium high heat then adding the garlic and onion.

cook till spinach till it wilts then remove from heat.

to make the hollandaise, start by filling a medium sauce pan 1/2 way full of water. bring the water to a soft boil and put a metal bowl over. add the egg yoke and whisk till the egg yoke starts to deepen in yellow color. remove from heat. add the clarified butter by pouring it slowly in the yoke, reason why I do that so the sauce doesn't break.

spread the butter over the bread of choice and bake in the oven till the tops are golden brown. then add the cheese and put back in the oven till cheese is a little gooey. remove from oven.

to finish, place bread down first. then top it with the tomato and sauted spinach. place the meat on top with a fried or poached egg. finish with hollandaise and a pinch on paprika.
