This is a camping recipe adapted to the stove, so cooking over a fire is welcome! Back in days, this was actually cooked over a few hours in a milk can over a campfire to feed a lot of people at once. I decided to try my own version of it.

Ingredients

  1. 2 lbred potatoes 2 to 3 inch diameter
  2. 6each carrots
  3. 2each onion
  4. 4each ears of corn on cob
  5. 5 dashbasil
  6. 20 dashchopped parsley
  7. 10 dashsalt
  8. 4 dashground black pepper
  9. 1 pinchvery small pinch all spice
  10. 10 dashgarlic salt
  11. 3each bay leaves
  12. 4 stickfresh thyme
  13. 2 lbmeat, cut in 3 inch pieces
  14. 1 1/2 tbspolive oil, extra virgin
  15. 4 clovegarlic cloves, smashed
  16. 2each bell peppers
  17. 2 cupbudwyeiser beer
  18. 1 headcabbage

Steps

    Get a baking sheet out and place near cutting board

  2. 2

    Wash red potatoes but don't peel, place in a mixing bowl

  3. 3

    Peel carrots, cut off ends

  4. 4

    Chop carrots in thirds and place on baking sheet

  5. 5

    Cut end off cabbage, discard the end

  6. 6

    Cut cabbage in 8 pieces, place on baking sheet

  7. 7

    Peel onions

  8. 8

    Cut onions in 8 pieces, place on baking sheet

  9. 9

    Shuck corn, rinse

  10. 10

    Cut corn in thirds, place on baking sheet

  11. 11

    Peel and smash garlic cloves, place in a bowl

  12. 12

    Slice bell peppers in half, remove seeds and rinse

  13. 13

    Slice each half of bell peppers in 5 to 6 slices, like it's a veggie platter serving

  14. 14

    Place bell peppers on baking sheet

  15. 15

    Heat oil in a 3 quart pot

  16. 16

    Sear meat chunks

  17. 17

    Remove meat, set aside

    Fill bottom of pot with red potatoes

    Layer cabbage on top of red potatoes

    Layer corn on top

  21. 21

    Layer carrots on top

    Layer onions on top

    Layer smashed garlic cloves on top

    Add basil, chopped parsley, salt, pepper, allspice, garlic salt, Bay leaves, fresh thyme

    Measure beer, note it foams!

    Pour beer on top of vegetables

    Put cooked meat on top

    Cook on medium high for 30 minutes

    Add bell peppers

  30. 30

    Cook on medium high another 20 to 30 minutes, until potatoes are cooked aka you can pierce them

    Remove Bay leaves and discard

    Serve on a huge platter (this fills an entire roast pan), seasoning to taste
