Blueberry-Red Bull Braised Pork Loin

  1. 1pork loin roast
  2. 2 canblueberry red bull
  3. 3/4 cupblueberry preserves or fresh blueberries
  4. 2 tspdried basil
  5. 2 tspground coriander seed
  6. 2 tsponion powder
  7. 1 tspgarlic powder
  8. 1/2 tspground white pepper
  9. 2/3 cupapple cider vinegar
  10. 1 pinchsalt
  11. 1vegetable oil; as needed

Cooking Instructions

    Cover pork loin with just enough oil to cover. Season with dried spices. Heat vegetable oil in a deep saute pan. Add pork loin. Sear on both sides. Remove from pan and set aside.

    Add vinegar to saute pan. Scrape up any fond with a wooden spoon. Reduce until nearly evaporated. Add red bull. Return pork loin to pan. Braising liquid must not exceed the height of the pork loin.

    Bring to a simmer. Cover. Bake at 300° for approximately 30-40 minutes or until pork reaches desired doneness. Serve with braising liquid.
