Ingredients

  1. tuna patties
  2. 1purple onion chopped
  3. 1turnip finely chopped
  4. 1kolorabi finely chopped
  5. 3 clovegarlic
  6. 4mangold leaves chopped
  7. 4kale leaves chopped (remove thick part of stem)
  8. 1/2 packagesbaby spinach
  9. 1/3 bunchchopped parsley
  10. salt
  11. pepper
  12. 2 cantuna drained
  13. 1 cupoatmeal finely chopped or instant
  14. 2 mediumeggs
  15. 1olive oil, extra virgin for frying

  1. 1

    Sautee chopped onion, kolorabi, and turnip over low flame until softens

  2. 2

    Add chopped garlic and continue to sautee

  3. 3

    Add leafy vegetables and simmer until wilted

  4. 4

    Remove from flame and let cool a bit

  5. 5

    Beat eggs and mix in flaked tuna then add salt and pepper

  6. 6

    Combine tuna mixture with sauteed vegetables

  7. 7

    Add half oatmeal and mix. Add additional oatmeal until consistency right for forming patties

  8. 8

    Form patties and fry in heated olive oil. May bake in oven if preferred - should brown on both sides.

  9. 9

    Drain fried patties on absorbent paper. Let cool a little and serve warm. Can be reheated.
