Ingredients

  1. 425 gramsCanned Corn, preferably with cream.
  2. 2 tbspWater
  3. 1 tbspCornstarch
  4. 1 1/2 cupDiced chicken
  5. 2Eggs
  6. 3 cupChicken Stock (I used beef as I didn't have chicken, but it works as well.)
  7. 1Coriander for garnish

Cooking Instructions

    Add the stock, corn and chicken into a saucepan to boil.

  2. 2

    Once it has boiled, stir in the cornstarch after mixing it with the water

  3. 3

    Leave it to simmer for around two minutes before cracking the eggs over the pot.

  4. 4

    Stir to mix and serve with coriander.
