Ingredients

  1. 12-16 ozshredded seitan or similar plant-based meat (350-450 grams)
  2. 2.2 lbscorn tortillas (about 1 kg)
  3. 3 1/2 tablespoonssour cream (50 grams)
  4. 1/2 lbqueso fresco (about 225 grams)
  5. 1/2small head red leaf lettuce
  6. 1 cuphomemade salsa
  7. 1 cuppickled onions
  8. 1avocado

Steps

  1. 1

    Place a small spoonful of shredded seitan at one end of a tortilla, spread it out, and roll up tightly.

  2. 2

    Insert a toothpick through the center of the flauta to hold it together, grouping 3 flautas per toothpick.

  3. 3

    Repeat until you use up all the filling or tortillas.

  4. 4

    Fry in hot oil until golden brown and crispy.

  5. 5

    While frying, wash and chop the lettuce, crumble the queso fresco, and pickle the onions as desired.

  6. 6

    Remove the flautas from the oil and place them on paper towels to drain.

  7. 7

    Serve on a plate and top with sour cream, lettuce, salsa, queso fresco, pickled onions, and avocado, in that order.
