Ingredients

  • 50 gramsRice noodles.
  • 1 tbspCoconut oil.
  • 1Sliced red onion.
  • 250 gramsTofu or soya chunks.
  • 2 tbspSoy sauce.
  • 1 tspFresh crushed ginger.
  • 1Crushed garlic clove.
  • 125 gramsBeansprouts.
  • 8Peeled and stoned lychees.
  • 1 tbspBlackstrap molasses.

Steps

  1. 1

    Soak the rice noodles in boiled water for 4mins then drain, rinse in cold water and drain again. Set aside for now.

  2. 2

    Fry the onion and tofu/soya chunks in the coconut oil over a high heat until golden.

  3. 3

    Add in the soy sauce then stir until evenly coated.

  4. 4

    Reduce the heat slightly and add in all other ingredients, including the noodles.

  5. 5

    Cook until all heated through.

  6. 6

    Serve in bowls topped with nori flakes and sesame seeds and a wedge of lime on the side.
