Ingredients

  1. 1 lbGround beef
  2. 1 lbFrozen chopped spinach
  3. 1/2 cupFinely chopped yellow onion
  4. 1 tbspButter
  5. 1/2 lbMushrooms
  6. 1/4 cupCoconut cream/milk
  7. 1/2 cupCelery (diced)
  8. 1/2 cupParsley leaves (loosely packed)
  9. 1/4 cupFlour (coconut)
  10. 1 cloveGarlic (minced)
  11. 1 tspKosher salt
  12. 1 1/2 tspBlack pepper
  13. 1/4 tspNutmeg
  14. 2 eachEggs
  15. 1Olive oil

Steps

  1. 1

    Defrost spinach - press out all liquid in colander

  2. 2

    Heat butter over medium heat - toss in chopped onions, mushrooms, and salt/pepper to taste

  3. 3

    Sautéed veggies until liquid has evaporated & onions softened

  4. 4

    Purée (in blender) coconut milk, parsley, and celery

  5. 5

    Pour purée over ground beef in a large bowl - add chopped spinach, coconut flour, garlic, measured salt/pepper, nutmeg, eggs (beaten), and mushrooms

  6. 6

    Combine all ingredients by hand

  7. 7

    Form mixture into patties

  8. 8

    Fry in olive oil or cook on grill. Can add marinara sauce as topping if desired
