Ingredients

  • 1 1/4 cupshelled edamame beans (or 5 cups in pods)
  • 1 cupwater
  • 3 tbspalmond butter
  • 1 tbspsesame oil
  • 1 tbspsoy sauce
  • 1/4 cuprice vinegar
  • 1 clovegarlic
  • 1 mediumcarrot
  • 1 smallzucchini
  • 1 smallyellow squash
  • 1 cupcooked chicken
  • 1green onion
  • 2 tbspchopped peanuts

Steps

  1. 1

    Prep: julienne carrots, zucchini, squash. Clean and press garlic.

  2. 2

    Cook and dice chicken

  3. 3

    Heat Edamame and water in micro cooker for 3-4 minutes on high. Drain and cool completely.

  4. 4

    Combine almond butter, oil, soy sauce, vinegar and garlic. Mix well.

  5. 5

    Toss vegetables, cooked chicken, and beans. Chill 30 minutes or until ready to serve.

  6. 6

    Sprinkle with green onion and peanuts.
