I got this recipe along with a package of fresh herbs I bought and changed a few tiny things. It makes 1 loaf and its so yummy especially if you dip it in olive oil and balsamic vinegar.

Ingredients

  1. 2 tbsprosemary
  2. 2 tbspthyme
  3. 2 tbspbasil
  4. 1/4 cupolive oil
  5. 1 tbspolive oil
  6. 1 tbspsalt
  7. 1/2 tsppepper
  8. 1 cupwarm water
  9. 2 tsprapid rise yeast
  10. 2 tbspsugar
  11. 4 cupflour
  12. optional
  13. 3 tbspshredded parmesan cheese
  14. 1 cloveminced garlic

Cooking Instructions

    In a large bowl combine yeast, sugar, and warm water. Let it sit 3-4 minutes until foam is on top. when it foams it means that the yeast is active.

    Use a mixer and slowly add the flour, salt and 1/4 c. of olive oil to the yeast mixture.

    Knead dough for 1 minute. Place the dough back in the bowl and cover with a damp towel. Place the bowl in a warm place to rise for 30-40 minutes (I set it in the oven)

    Take a small cookie/baking sheet and grease it. Roll out the dough to fit the pan (you can just plop the dough on the cookie sheet and use your hands to spread the dough). Cover it with the damp towel and let it rise for another 15 minutes.

    Preheat the oven to 400°F. Use your fingers to make small dents all over the surface of the dough. Drizzle the remaining olive oil on the dough and sprinkle the Rosemary, Thyme, Basil, Pepper and if like minced garlic and Parmesan cheese.

    Bake 15-20 minutes & serve warm! Enjoy!!
