Yesterday, I hosted my friends and made Sheikh Mahshi, freekeh, chicken fatteh, baked kibbeh, and quince kibbeh.

To make kibbeh nayyeh, soak the bulgur in the hot water, cover, and let it sit for 1 hour until the bulgur absorbs the water.

Grate the onion and add salt, ground pepper, and pepper paste. Knead everything together very well by hand until it forms a dough-like mixture.

If the mixture is a bit sticky, shape it into finger-sized pieces by hand and serve with olive oil. Enjoy! You can also add 2 tablespoons of olive oil to the bulgur while kneading to make it softer and easier to shape.
