Plantain Flour with Ripe Plantain Moin moin (Pudding)

Actuslly there's a special name this dish but I cannot remember what's its calll and my Uncle refuse to pick my calls...
But it.made with unripe plantain flour mixed with ripe plantain paste...
There's a new twists to mine and that makes it even more yum instead of palm oil, i used Veggetable oil and instead of steaming in Plantain or moin moin leaves, I steamed.mine in a take away foil plate...
Different yes, But still the same amazing taste.

Cooking Instructions
- 1
Peel the ripe plantain,
cut into small sizes in a blender,
add.onions and fresh pepper and blend till smooth... (you can add very little water) - 2
Pour the mixture into a bowl, add the plantain flour gradually mixing eith warm water....
It must.not be watery.... - 3
When the mixture is right..
Add salt, smokd fsh, crayfish and season.cube (1 shlould do)
Pour in about 2 cooking spoonful of oil and mix well..
I add anout 1/2 a tsp of black pepper.for that special flavour. - 4
Oil you foil packs very well
Then pour the right amount of the plantain mixture into it and place
inside a pot with boiling water - 5
Cover with a foil paper to prevent it loosing the steams and allow to cook for 20mins...
Once it set and the surface is dry...know that your Plantain Pudding is ready... - 6
You can serve this Pkantain pudding with Ogi, custard or oats...
The colour is usually.dark, but am guessing since I dried and made my Unriped Plantatin flour myself, it came out light yellow...
Also because it wasn't cooked with palm oil and in moin moin leaves, the colour is so.lovely.

I will kickstart the obsession with this simple chocolate pudding. This isn't your typical pudding. Do not expect mousse-jelly-like pudding here; if you are looking for a mousse, it is called a mousse, if you are looking for jelly, it is called a panna cotta. What you get here is a thick, almost hot chocolate-like, pudding.Once you understand that, let's talk about the recipe. There are lots of different ways to do this. One is to create a roux with flour and butter, then adding in the milk and chocolate. I personally find that by creating a roux, the pudding will turn out lumpy. It is quite inevitable. I also find that a roux doesn't really add any depth in terms of flavors to the chocolate pudding. Butter and milk don't really do much. To simplify the recipe, I decided to add the rest of the ingredients in stages, into lukewarm milk. In that way, lumps can be prevented.Instead of butter, I used olive oil. Yes, olive oil. But not extra virgin olive oil, cos it is too strong and will overpower everything else. Olive oil adds that minty depth to the flavor profile.
