Ingredients

  1. 1/4 cupolive oil
  2. 5 clovesgarlic, minced
  3. 5onions finely chopped
  4. 2 inch pieceginger peeled and minced
  5. 1 tbsptomato paste
  6. 3 tbspberbere
  7. 8skinless chicken legs
  8. 1 tspcardamom
  9. 1 tbspsalt
  10. 3 tbspbutter
  11. 3 cupschicken stock
  12. 1 cupred wine
  13. 1 lbswiss chard
  14. 1/2 cupcottage cheese

Steps

  1. 1

    Heat oil over low heat. Add garlic, onions, and ginger. Cook until softened about 30 min.

  2. 2

    Add tomato paste and berbere and cook for 15 more min

  3. 3

    Season chicken legs with cardamom and salt. Add chicken, butter, stock, and wine to the pot. Bring to a simmer and cook until chicken is cooked, about 1 hr

  4. 4

    In a separate pot cook swiss chard. Transfer to stew when cooked.

  5. 5

    Serve with cottage cheese on the side
