Roat or sweet paratha is a traditional Garwali dish of Uttarakhand usually prepared in marriages and other special occasions. Though a festive dish, it is very simple to make.

Roat or sweet paratha is a traditional Garwali dish of Uttarakhand usually prepared in marriages and other special occasions. Though a festive dish, it is very simple to make.
Steps

Heat 1/2 cup ofwater in a pan. Add jaggery and simmer until the jaggery dissolves completely.

In a mixing bowl add wheat flour, cardamom powder and saunf. Give it a mix.

Now make a doughnut with hot jaggery mixture. The dough is like our normal chapati dough, little hard.

Keep aside for 1/2 an hour.

After 1/2 an hour make equal portions of dough. Make small ball of each portion and roll to a thick puri.

Like this roll all puris.

Heat a tawa of griddle and roast each roat with ghee.

Serve hot with a cup of tea.
