Ingredients

10 minutes
3-4 servings
  • 1/2 cupQuinoa,
  • 1/2 cupcooked vegetables of choice,
  • salt and chilli powder to taste,
  • to tastecinnamon powder,cardamom powder and lemon juice
  • For tempering-
  • 1 tablespoon oil
  • 1/2 teaspoonmustard seeds
  • 1/4 teaspoonasafoetida
  • 1/2 teaspoon urad dal
  • 1/2 teaspoonchanadal
  • 1 sprigcurry leaves,
  • 2whole red chillies
  • 2 tbsppeeled peanuts,cashewnuts,raisin and chopped gingerto taste

Steps

    To begin making the Vegetable Quinoa Upma, we will first have to wash and cook the quinoa separately in 1cup water with salt, till soft on low heat. keep aside.

  2. 2

    Heat oil in a heavy bottomed pan; add mustard seeds, chanadal,red chilli and allow it to crackle and roast until the chanadal turns golden brown.

    Next add in the curry leaves and asafoetida, peeled peanuts,cashewnuts,raisin and chopped ginger.

  4. 4

    Stir in cooked vegetables of choice for a few minutes.

  5. 5

    At this stage add in the remaining spices like, red chilli powder cinnamon powder and cardamom powder and finally the cooked quinoa.

  6. 6

    Cover the pan and simmer for about 3 minutes until all the ingredients come together and the flavors come well into the Quinoa.

  7. 7

    Check the salt and spice levels and adjust to suit your taste. Turn off the heat. Add lemon juice as required.
