Ingredients

6 servings
  1. 1/2 cupfat-free mayonnaise
  2. 1/8 cupwhite vinegar
  3. 1 tbspdijon mustard
  4. 1 tspsalt
  5. 1/2 tsppepper
  6. 1/2 tspcayenne pepper
  7. 1/2 tbspsugar
  8. 1/2 cupred bell pepper, diced
  9. 1/2 cupyellow or orange bell pepper, diced
  10. 1/2 cupgreen onions, diced
  11. 1/2 cupcarrots, shredded
  12. 1 cupsugar snap peas, blanched
  13. 1/4 cupjalapeno pepper, diced
  14. 1/4 cuppoblano pepper, diced
  15. 8 ozuncooked pasta

Cooking Instructions

  1. 1

    Mix mayonnaise, vinegar, mustard, salt, pepper, and cayenne pepper together. Whisk in sugar.

    Stir in chopped veggies - bell peppers, green onions, carrots, peas, jalapeno, and poblano pepper. Refrigerate.

    Cook pasta according to instructions, drain without rinsing. Allow pasta to slowly come to room temperature.

    Mix pasta and dressing in a large bowl until pasta is well coated. Refrigerate overnight.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more.
