Ingredients

  • 1 cupuncooked quinoa, rinsed
  • 2 cupswater
  • 1 cupvegetable like corn, yellow and red bells, mushroom onion and tomato
  • 1/2 cupcottage cheese/ paneer
  • 1 cupmicro greens like coriander, leaf parsley, olives
  • 1 tbspred wine vinegar
  • 1/4 cuplime juice. Salt and pepper as per taste
  • 1 tbspextra virgin olive oil

Steps

  1. 1

    To cook quinoa, add rinsed quinoa and water in a saucepan and boil over medium flame for about 15 min.

  2. 2

    Remove from flame and drain excess water and let quinoa rest for 15 min so that it fluff up.

  3. 3

    In a large serving bowl, add all veg, planner, microgreens, add vinegar, lime juice, salt and toast them gentle...

  4. 4

    Add quinoa into the serving bowl and mix gently.

  5. 5

    Season with olive oil.. and serve either at room temperature or chilled....
