Ingredients

  • 3garlic cloves, crushed with the flat knife
  • 1 tbspgranulated sugar
  • 3 tbspfish sauce
  • 2 tbsplime juice
  • 1 tbsplight flavoured oil
  • 1 tspturmeric
  • 1 tspseasalt
  • 1 tbspground coriander
  • 1,5 kgchicken, jointed into 8 pieces
  • 1lemon,cut into wedges

Steps

  1. 1

    Whisk together the garlic,sugar,fish sauce,like juice,oil, turmeric,salt and coriander in large bowl,add the chicken pieces and toss to coat,. Leave to marinate in the fridge for 1 hour

  2. 2

    Preheat oven 200°c/gas mark 6 cook the chicken until browned and cooked through. Bake for 45 minutes.serve with lemon wedges

  3. 3
