Steps

Roast Potatoes untill almost cooked through. Cut into half and scoop out soft insides into a bowl. Slice Bacon into small strips and distribute between the open skins.

Mix the scooped Potato, Butter and diced cheese then mash together.

Transfer mixture into the skins, over the top of the bacon pieces
- 4
Add ground Black Pepper to taste. Cook in medium hot oven for a further 20 minutes until Cheese is bubbly and brown. Enjoy hot or cold!
