Ingredients

  • 1/2 poundsnap peas
  • 2 cupsEnglish peas
  • 1shallot minced
  • 1/4 cupchives chopped
  • 1/3 cuprice vinegar
  • 2 tbsptoasted sesame seeds
  • 1 clovegarlic minced
  • 1 tbspDijon mustard
  • 1 tbspsoy sauce
  • 1/4 cupcanola oil
  • 2 tbspsesame oil
  • 1/4 tspblack pepper
  • Optional: tomatoes, avocado, fresh corn

Steps

  1. 1

    Blanch all peas in salted boiling water for 2 min. Plunge into an ice bath, then drain.

  2. 2

    Put peas, shallot, and chives in a mixing bowl. Mix all remaining ingredients in a separate container. Add optional veggies like tomatoes, avocado and fresh corn. Toss together.
