Ingredients needed for the yamarita. Peel, wash and slice yam into medium slices. Cut the peppers, onions and curry leaves, set aside the flour.

Break eggs into a bowl, add the chopped veggies, add some salt and seasoning. Set aside

Boil the yam with salt, when yam is cooked, drain to remove excess water.

Coat the boiled yam with flour as shown below (this process is to help the egg stick to the yam when frying)

When all the yam is finally coated, put inside the egg mixture and rub all over the body, use your hand to pick some of the veggies and place on the flat surface of the yam, put in hot vegetable oil and fry until golden brown and slightly crispy.

You can fry the rest of the egg mixture and roll it up to give you the omelette roll. Garnish the yamarita with some curry leaves. Your Delish yamarita fries is ready!!! 😋😋😋
