Ingredients

  1. 1red snappers (about 1 kg total), clean and cut to 4-6 pieces
  2. (I use 6 part of snapper fin meat)
  3. 1lime, extract the juice
  4. 1 teaspoonsalt
  5. 3 tablespoonsoil
  6. 2lemongrass, bruised and knotted
  7. 1pandanus leaves (you can find at the Asian grocery)
  8. 5kaffir lime leaves
  9. 1 literwater
  10. 3green tomato, cut each inti halves
  11. 1tomato cut into quarter
  12. 1 teaspoonsalt, to taste
  13. Grind the following into spice paste
  14. 100 gramshallot
  15. 3 clovesgarlic
  16. 10red cayenne chillies
  17. 2-10red bird's eye chillies (or more if you like more spicy)
  18. 2 inchginger
  19. 1 inchturmeric
  20. 3candlenuts
  21. Garnish
  22. 2scallions, thinly sliced
  23. 1 handfullemon basil/Thai basil leaves

Steps

  1. 1

    Heat oil in a wok/pan on high heat and sauté spice paste, lemongrass, pandan leaves, and kaffir lime leaves until fragrant, about 5 minutes.

  2. 2

    Add the fish into the wok/pan, mix well.
    Add water and bring to a boil.  Add grean tomato, tomato, and season with salt. 
    Reduce heat, and simmer until the sauce is slightly reduced, about 30 minutes. Adjust the salt as needed.

    Turn off heat, transfer to a serving plate, garnish with scallions and lemon basil.

  4. 4

    Enjoy with rice and crackers, happy cooking guys 😍
