Ingredients

  • 1/2 cupfinely chopped spinach leaves
  • 1/2 cupfinely chopped raddish leaves
  • 1/2 cupfinely chopped spring onion leaves
  • 1/2 cupfinely chopped fenugreek leaves
  • 1 cupboiled rice
  • 1 cupbesan
  • 1/2 cupbajra
  • 1/4 cupjowar flour (white millet/ sorghum flour)
  • 1/4 cupsafed dholka flour (rice+ urad flour mixture)
  • 2 tbspgreen chillies-ginger paste
  • 1/2 tspturmeric powder
  • 2 tspsugar
  • 1 tspwhite sesame seeds
  • 1/4 tsp asafoetida (hing)
  • 1/4 tspsoda bi carb
  • 2 tbspoil
  • to tasteSalt
  • Curd to bind as required
  • For tempering
  • 2 tbspoil
  • 1 tspmustard seeds
  • 1 tspcummin seeds
  • 2 tspwhite sesame seeds
  • as neededFinely chopped fresh coriander leaves to garnish

Steps

  1. 1

    Chopped all green leafy vegetables. Wash in water and keep aside. In mixing bowl add all flours.

    Add chopped green leafy vegetables, boiled rice, green chillies-ginger paste,salt, sugar, oil, soda bi carb, turmeric powder, asafoetida, sesame seeds.mix all.

    Add curd and bind to thick mixture.

    Roll out muthiyas from prepared mixture. Steam for 30 mins.

    Cool and cut into 1/2" pieces.

    Add & heat oil in kadhai,do tempering of mustard cummin and sesame seeds as they splutter. Add chopped steamed muthiyas pieces,mix and cook for 2 minutes. Garnish with finely chopped fresh coriander leaves.

    Serve/ Relish Hot Greens Muthiyas.
