Ingredients

  1. 1/2 kgsurti papdi
  2. 1big potato
  3. 1kand(purple yam)
  4. 2-3sweet potato
  5. 2baigan
  6. 1banana
  7. ForMethi bhaji muthiye(fenugreek):
  8. 1 cupFresh meethi leaves
  9. 1/4 cupcoconut (grind)
  10. 1/4 cuppeanuts (grind)
  11. 1 tspginger garlic paste
  12. 2 tspgreen chilli paste
  13. PinchTurmeric powder
  14. to tasteSalt
  15. 1/2 tspsugar
  16. SomeCoriander leaves
  17. 1 tspGreen garlic
  18. 1 tspajwain/carom seeds
  19. Pinchbaking soda
  20. 4-5 tbsoil

Steps

  1. 1

    Preparation of methi bhaji muthiya- take 1cup fresh methi bhaji add salt, green chilli paste, haldi, little bit of sugar, jawar aata, little amount of wheat aata. Mix well. Sprinkle little amount of water & make muthiya. Fry in low flame.

    Mix all masala except ajwain and baking Soda.

  3. 3

    Put slit on banana and baigan. Stuff the masala in it. Remaining masala is mix with all vegetables.

  4. 4

    Put oil in cooker. Put ajwain & baking Soda. Add all Veggies and stir. Add 4-5 tbsp water and close the lid.

  5. 5

    Give 2-3 whistles. Switch off the gas and remove the pressure. Open the lid.

  6. 6

    Decorate with green garlic and coriander leaves. (If you don't open the lid immediately than papdi becomes yellow in colour).
