This can be relished with any Indian breads during breakfast or dinner. I cook this version of dum aloo during any upvas, as it is free from onion and garlic.

Steps

Heat some oil in a wok and add the potatoes.

Saute it in a medium flame till the moisture dissapears.

Add salt and mix it very well.

Saute it well and cover it for sometime.

Repeat the process till the potatoes are fried well. Remove them from the flame.

In the same wok, add some oil if required.

Add the hing and then the yogurt.

Saute them for a while. Then add the fennel powder, red chilli powder, kashmiri red chilli powder and mix them well.

Then add the ginger paste and saute till all the masalas are fried well.

Add the potatoes and mix them well.

Add some water to boil the potatoes and some salt for the gravy.

Keep it covered for a while.

After sometime check whether the potatoes are cooked well.

If yes add some sugar and garam masala powder.

After you get a thick gravy, switch off the flame and add the ghee.

Mix it well and serve hot
